Because avocados oxidise quickly after you slice them, this sauce is best served immediately. If you do have leftover sauce, transfer it to an airtight. Loaded with fresh ripe avocado, lemon juice and Parmesan cheese. Throw everything in a food processor and pulse.

While the pasta is cooking I make the avocado "cream" sauce. While the pasta cooks, make the sauce. In a food processor, combine the garlic and basil and pulse to mince. A lovely light dish that is perfect for Spring. Pasta - any pasta will work, but we used riccioli pasta as the sauce clings really well to it.
